This past week my family was invited to a BBQ. We were to bring a side dish with us that would pair well with hotdogs, brats and hamburgers. I’m not a huge side dish maker. In our house, it is rare that we have a side dish with our main dish.
My brain was not functioning and I was struggling to think of what I should bring. I began looking through my recipe box and found this recipe, which my oldest daughter had written out when she was still living at home.
I asked her about it and she said she had found a maple balsamic vinaigrette recipe online, tried it and didn’t enjoy it. So she tweaked it to her liking, wrote down her tweaking and stuck the card in my recipe box.
Mixing up the dressing
This dressing comes together in no time. All you need to do is add all the ingredients to a small jar (1/2 pint sized is perfect) with a lid. Make sure the lid is on tight and give it a good long shake. And that’s it!
I have a friend who will sometimes pick up a haul from the food bank for us and recently we were given several bags of salad, along with a bag of romaine hearts. The salad bags were gone but the romaine hearts were about to reach the end of their days. So, I decided to chop up (my favorite knives can be found here!)the romaine lettuce, add a few of the random veggies and such that were lying around and then make this dressing to go along with it.

This dressing is perfect for a salad with a bit of sweetness added. For mine, I included chopped romaine, half of a chopped red onion, a few quartered cherry tomatoes, fresh from my garden, and then I added one large chopped apple. I wish I would have had some candied pecans because those are my favorite and I love them in salads. But, even without the pecans, when I topped this salad with this maple balsamic vinaigrette, it was delicious!
This recipe is so fast to make and it is absolutely fabulous. I used some of my Elevated Olive Strawberry Balsamic Vinegar (similar to this) to make mine. This added a bit of strawberry flavor and was so delicious. You can also use regular balsamic vinegar if that is all you have. Add some chopped grilled chicken to this salad and you have a full meal!
