How to Make Simple Carnivore Meatballs
I got this recipe from a friend many years ago. I’ve made these often for my family and we have tweaked them to be just the way we like. Lately, I’ve also changed a few things to keep them carnivore.
The original recipe is as follows:
- 1-2 lbs. ground beef (you could also use ground turkey, chicken or wild game)
- 1 egg
- 1 chopped onion (I like to shred mine)
- 1 cup oats
- salt and pepper to taste
To make them carnivore, I changed a few things.
- Replace the oats with pork panko (or grind your own pork rinds)
- No chopped onion (unless you don’t mind it)
I usually keep the onion but I do switch the oats out for pork panko. My kids don’t notice and the result is the same.

Preheat the oven to 350º F. Add all of the ingredients to a large bowl and mix them together. Then shape them into balls. I like to make them about golf ball sized.
Freezer Friendly
At this point you can put them on the baking sheet and stick them in the freezer if you’d like to make a freezer meal for later. When I choose to freeze mine, I freeze them solid and then package them in ziploc bags. I like to put 4-5 meatballs in each bag, which is just enough for one person for one meal.
When I’m ready to eat them, I pull out the frozen meatballs, put them in my airfryer for about 14ish minutes at 350º, or bake them in the oven at 350ºF for 20-25 minutes.

Cook Them
If you choose not to freeze your meatballs, after you form them, you will want to line them on a greased baking sheet, spacing them about 1/4 inch apart. You can also use these silicone baking mats (which I have and love!) or you can cover the baking sheet with foil. Bake the meatballs for about 20 minutes. If you make biggers meatballs, you will need to add some baking time to make sure they get cooked through.

And that’s it! Serve them with some of my sugar free sweet and sour sauce (my kids add rice too) and you have a simple, homemade, healthy dinner.

- Mix ingredients in a large bowl.
- Shape into golfball sized balls.
- Grease a baking sheet and line meatballs onto baking sheet, keeping about 1/4 inch of space between them.
- Bake in preheated oven for 20 minutes.
- Remove from oven and eat!
