Breakfast Quesadillas

Melty cheese, salty sausage and a crunchy tortilla, what could be better? These breakfast quesadillas are an easy breakfast that your family is sure to love!
Servings: 10 people

Ingredients
  

  • 1/2 lb bulk breakfast sausage
  • 10 eggs
  • 1 potato cubed
  • 2 cups shredded cheese We use Colby-Jack
  • 10 flour tortillas burrito size
  • 2 tbsp butter

Method
 

  1. Melt the butter in a frying pan over medium heat.
  2. Add chopped potatoes and cook until soft on the inside and crunchy on the outside.
  3. Remove potatoes from pan and set aside.
  4. Add sausage to pan and cook until browned and a bit crunchy.
  5. Once sausage is cooked, crack eggs over sausage and scramble.
  6. Cook eggs until done.
  7. Remove pan from heat.
  8. Using one tortilla, sprinkle with shredded cheese on half. Then top with a few potatoes and some of the sausage/egg mixture.
  9. Fold tortilla in half like a taco.
  10. Cook on a pan over medium heat until the first side of the tortilla is crunchy.
  11. Flip quesadilla and cook the second side until crunchy.
  12. Remove from heat and enjoy!
