Begin by warming your skillet with butter over medium heat while you prepare the meat.
If using chicken breasts, slice the meat into strips that are 1/2 - 3/4 inch thick.
Mix the pork rinds and cheese together in a bowl.
Taking once piece of meat at a time, dunk the chicken strip into the eggs to coat thoroughly.
Move the chicken from the eggs into the pork rinds and coat completely.
Once the skillet is hot, move the chicken into the skillet. Don't overload your skillet. If you put too many pieces of meat into the skillet at once, it will cause the skillet to cool down and the meat won't crisp up as well.
Cook the chicken for 3-5 minutes on each side until it is cooked in the middle and crispy on the outside.
