Oatmeal Chocolate Chip Cookies without Eggs

Ingredients
  

  • 2 cups butter* softened
  • 2 cups brown sugar
  • 1 cup plain greek yogurt
  • 2 tsp vanilla extract
  • 3 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 6 cups oatmeal
  • 2 cups chocolate chips

Method
 

  1. Preheat the oven to 325 degrees fahrenheit.
  2. In a large mixing bowl, cream together the butter and brown sugar.
  3. Add the yogurt and vanilla and mix again.
  4. Next, add the flour, baking soda, salt and oatmeal. Stir until combined.
  5. Add the chocolate chips and stir until mixed thoroughly.
  6. Using a cookie scoop, place cookies on a greased baking sheet about 1.5 inches apart.
  7. Bake in preheated oven at 325 degrees for 10-12 minutes.
  8. Cool on pan for 5 minutes, then transfer cookies to a wire cooling rack to finish cooling.

Notes

*butter is best for these cookies. If you substitute margarine or oil (olive, canola or coconut) the texture will not be right.
