This creamy and delicious cheesy chicken and broccoli casserole is the perfect dish to take to any gathering. Packed with protein rich chicken, yummy broccoli and three types of cheese, it’s sure to be loved by all!

Easter weekend was coming up and I had yet to decide what to have on our menu. I was too late to do anything super fancy, but I wanted something out of the ordinary… something we don’t normally have.
I settled on making cheesy chicken, broccoli and rice casserole. And I did make it for my kids. But I knew that my husband and I needed a low carb option, so I opted to remove the rice, skip the cream soups that I added to the rice casserole, and add a bit more cheese for some creaminess.
The final product was amazing! The casserole had the perfect amount of creamy goodness and I couldn’t get enough! The kids actually like it better than the one I made for them!
Needless to say, this casserole now has a permanent place on our menu.

Cheesy Chicken and Broccoli Casserole
Ingredients
Method
- Preheat oven to 375° F.
- Spray a 9×13 pan with cooking spray, or rub with oil to coat the inside.
- Mix all of the ingredients (minus 1 cup Colby Jack shredded cheese) together in a large bowl.
- Pour the chicken mixture into the greased pan.
- Spread evenly to fill pan.
- Top the chicken mixture with 1 cup Colby Jack shredded cheese.
- Bake in preheated oven for 45 minutes to 1 hour, or until hot and bubbly.
