You will love ham, egg and cheese cups!
Ham, egg and cheese cups are the perfect breakfast to make ahead. They are low carb, customizable, and ideal for meal prep. Plus, they are easy for little hands to hold and only require 3 ingredients. You can easily take them to a church potluck or a brunch with friends.
To make these cups, you’ll need just three basic ingredients.
- Ham: Thinly sliced deli ham works great as a cup to hold the egg and cheese
- Eggs: You can use whole eggs or egg whites. Crack the egg straight into the ham cup, or crack them all into a bowl and whisk them with a bit of milk before you pour them in.
- Cheese: Use your favorite cheese. Shredded cheddar, mozzarella, or even a mix works perfectly.
- Optional add-ins: Make it your own by adding diced vegetables, cooked bacon, crumbled sausage, or seasonings.

How to make this easy breakfast.
- Preheat your oven to 350 degrees F.
- Lightly grease a muffin tin and line each tin with a slice of deli ham, pressing it into the tin.
- Add a tablespoon of cheese into the ham cup.
- Crack one egg directly into the cup on top of the cheese, or pour in whisked eggs.
- Bake for 15-20 minutes or until the eggs are set.
- Let them cool for a few minutes before removing them from the tin.

Tips for success
- Double or triple your recipe and then freeze the extras for a fast breakfast. Simply pull a couple of ham cups from the freezer and warm them in the microwave.
- Store the cups in an airtight container in the fridge for up to 5 days.
- Experiment with different types of cheese or switch out the ham for turkey or roast beef.
- Add your favorite chopped veggies such as onions, green peppers or tomatoes, some crumbled bacon or some cooked ground sausage.
These ham, egg and cheese cups are a lifesaver for large families. They make breakfast quick and healthy on busy mornings, but they are also a great option for dinner. Try them out and let me know if your family enjoys them too!
