Choose the Right Pan
One trick that I’ve learned is to not over crowd your pan. If you pan is a 12 inch pan, you only want to cook 12 eggs in it at a time. If your pan is only 8 inches, then only 8 eggs should be cooked. My pan of choice is a cast iron skillet. I use them to cook almost everything in my kitchen. They are easy to maintain and cook evenly for the perfect scramble. Whatever you choose, make sure it is nonstick for the best results.
Crack and Whisk
Crack your eggs into a bowl and whisk them thoroughly. You want to combine them completely so they become a yellow color and you can’t see a separation between the yolk and the white. Whisking also adds air to the eggs, so the more you whisk, the fluffier your eggs will be. If you want your eggs creamy, add a splash of milk or cream while whisking.

Preheat the Pan
Preheating your pan in a crucial step to make scrambled eggs. Place you pan over low/medium heat and add your butter. Let the butter melt completely and swirl it around to cover your pan.

Pour and Stir
Pour the eggs mixture into the pan. Let it sit for 30 seconds to a minute. Once it starts to cook around the edges, gently and slowly stir the eggs, pulling from the edges toward the center and folding over.

Cook Slowly
Cook your eggs slowly over low eat, stirring frequently but gently. Often I will stand over the pan and stir slowly for the entire cooking time. This keeps the eggs from burning on the bottom of the pan and helps them cook evenly. It doesn’t take long, only a few minutes and you’ll have perfect scrambled eggs.

Season at the End
Add your favorite seasonings at the end of the cooking time. A generous sprinkle of salt and some pepper are perfect.
Remove from the Heat
Even after you turn off your burner, the eggs will continue to cook in the pan. To prevent them from overcooking, turn the burner off just before the eggs are done cooking. Then take them out of the pan and plate them. This keeps them creamy and fluffy, rather than rubbery and crunchy.

Ingredients
- 1-2 tbsp butter
- 2-4 eggs
- 2 tbsp milk or cream optional
- salt and pepper
Instructions
- Preheat a medium sized skillet on low/medium heat
- Add 1-2 tablespoons of butter to the pan and melt
- In a bowl, crack and whisk eggs thoroughly
- If using, add milk and cream while whisking
- Pour eggs into melted butter and let sit for 30 seconds to 1 minute
- Once the edges are starting to cook, stir the eggs gently and slowly, pulling from the edges toward the middle and flipping
- Remove from heat as soon as the eggs are cooked completely
- Sprinkle with salt and pepper and enjoy!
