Breakfast Casserole with Sausage and Tater Tots

This easy breakfast casserole is the perfect dish for busy mornings, brunch gatherings, or big family weekends!

Ingredients
  

  • 1 lb breakfast sausage
  • 1 30 oz. bag frozen tater tots
  • 12 large eggs
  • 1 cup milk, half and half or heavy cream
  • 8 oz. cubed cheese I used Colby Jack
  • 2 cups shredded cheese

Method
 

  1. Preheat your oven to 375ºF and grease a 9x13 baking dish.
  2. In a skillet, over medium-high heat, brown the sausage until fully cooked.
  3. While the sausage is cooking, crack the eggs into a bowl.
  4. Add the milk to the eggs and whisk until completely mixed.
  5. Spread the sausage out in the bottom of the baking dish.
  6. Slowly pour the egg mixture over the top of the sausage.Evenly drop the cubed cheese into the baking dish.
  7. Layer the tater tots over the top of the entire casserole.
  8. Cover the tater tots with the shredded cheese.
  9. Bake in preheated oven for 40-50 minutes until the eggs are set and the tater tots are crispy.
