If you are looking for a hearty, make ahead breakfast that is simple to prepare and sure to please a crowd, then look no further! This easy breakfast casserole with sausage, tater tots, eggs and cheese is the perfect dish for busy mornings, brunch gatherings and big family weekends.

My family and I recently went to Branson, MO for a week and I knew I would want some easy meal ideas for while we were there. This breakfast casserole was a hit! It’s packed with protein, full of flavor and can be prepped the night (or several days) before so you can enjoy your coffee while breakfast bakes in the oven.
Ingredients:
- 1 pound breakfast sausage
- 1 (30 oz.) bag frozen tater tots
- 12 large eggs
- 1 cup milk, half and half or heavy cream
- 8 oz. of cubed cheese – I used Colby Jack
- 2 cups shredded cheese
How to Make Easy Breakfast Casserole
- Preheat your oven to 375ºF and grease a 9×13 baking dish.
- In a skillet, over medium-high heat, brown the sausage until fully cooked.
- While the sausage is cooking, crack the eggs into a bowl.
- Add the milk to the eggs and whisk until completely mixed.
- Spread the sausage out in the bottom of the baking dish.
- Slowly pour the egg mixture over the top of the sausage.
- Evenly drop the cubed cheese into the baking dish.
- Layer the tater tots over the top of the entire casserole.
- Cover the tater tots with the shredded cheese.
- Bake in preheated oven for 40-50 minutes until the eggs are set and the tater tots are crispy.

This make ahead, simple breakfast casserole is ideal for a crowd! It can easily serve 8-10 people and goes perfectly with some fruit and coffee.
