Mix the filling ingredients together in a bowl and set aside.
Place a frying pan over medium heat on the stove.
Once the pan is hot, drop a small handful of shedded cheese onto the middle of the pan. Spread the cheese into a small circle.
When the cheese is beginning to brown and crisp around the edges, flip it over.
Cook the cheese shell for 30 seconds longer and then transfer to a plate.
Spread a large spoonful of the filling on the shell and spread it out a bit.
Roll the shell up like a taquito and enjoy!
