What Are Carnivore Taquitos?
Traditional taquitos are rolled-up tortillas filled with meat and fried to crispy perfection. While delicious, traditional taquitos are off limits for anyone on the carnivore diet. In this carnivore twist, we ditch the tortillas and use fried cheese instead. This protein packed, carnivore taquitos recipe is stuffed with meat and cheese making them a delicious and satisfying treat.
Ingredients for Carnivore Taquitos
One of the best parts of this recipe is its simplicity. Here are the ingredients you’ll need:
- Shredded Colby-Jack or mozzarella cheese (for the shell and for the filling)
- Canned chicken (you can also cook your own and shred it)
- Cream cheese
- Taco or fajita seasoning (optional)
That’s it!

Step-by-Step Instructions
1. Prep Your Ingredients
Start by gathering all your ingredients. Make sure your cream cheese is soft so it mixes easily.
2. Mix Everything Together
In a bowl, mix the cream cheese, canned (and drained) chicken and shredded cheese. You can also add the seasoning in this step. Mix everything together with a fork and set it aside.
3. Make the Shells
Put a frying pan on the stove top over medium heat. I love using my cast iron skillets for this. Once the pan is hot, take a handful of cheese in the middle of it and spread it out into a small circle. Let the cheese cook until it is brown and crispy around the edges. Flip the cheese and let it cook for just a bit more. Then transfer the cheese shell to a plate.

4. Assemble the Taquitos
Spread a heaping spoonful of filling onto the cheese shell. Roll the shell up like a taquito and let it cool a bit to harden up.

Enjoy these dipped in sour cream. You could also try a bit of salsa, or even some ranch dressing!
