This recipe keeps things simple with just a few ingredients: eggs, cream cheese, vanilla (optional) and allulose (optional). You can also add a few strawberries or raspberries, a drizzle of sugar-free caramel syrup, maybe a spoonful of pumpkin with some pumpkin pie spice, or a bit a peanut butter.

This pudding comes together so fast.
Step 1: Cook the eggs.
I know, this is weird. But the first thing you are going to do is scramble the eggs and cook them until you have scrambled eggs… yes, just like you would eat for breakfast.

Step 2: Add the ingredients to the blender.
Drop the cream cheese, vanilla, allulose and scrambled eggs into the blender (this one is similar to the one I use at home, it is different than the one in the picture). Turn your blender on and blend them together until the mixture is completely smooth and creamy.

Step 3: Put it in a bowl and refrigerate
Once the mixture is creamy and smooth, pour it out into a bowl. Then cover with plastic wrap (or lid if you have one) and put it in the fridge for 3-4 hours (or overnight) to cool and set.

Tips for Success
- Use full fat ingredients: We aren’t scared of fat on the carnivore diet. In fact, the more the better! The higher fat content your ingredients have, the creamier and more satisfying your pudding will be.
- Room temperature is key: Make sure the cream cheese is at room temperature before you start blending.
- Adjust sweetness (if desired): You don’t have to use allulose in this pudding. You can leave the sweetness out completely or you could use something else to sweeten it. Truvia, Swerve, erythritol, stevia or even maple syrup are great options.

Carnivore Vanilla Pudding
Ingredients
- 8 whole eggs
- 1 8 oz. brick of cream cheese
- 1 tsp vanilla extract optional
- 1 cup Allulose sweetener optional and can be replaced by your favorite sugar-free sweetener
Instructions
- Heat a skillet over medium heat. Add a bit of butter or oil if needed to keep the eggs from sticking.
- Scramble the eggs and cook until done.
- Once the eggs are cooked. Add them to a blender.
- Put the cream cheese, vanilla and sweetener in the blender. Cover and blend until completely smooth. You don't want any chunks or pieces left.
- Pour the pudding mixture into a bowl, cover and put in the fridge for 3-4 hours or overnight.
