Method
- Heat a skillet over medium heat. Add a bit of butter or oil if needed to keep the eggs from sticking.
- Scramble the eggs and cook until done.
- Once the eggs are cooked. Add them to a blender.
- Put the cream cheese, vanilla and sweetener in the blender. Cover and blend until completely smooth. You don't want any chunks or pieces left.
- Pour the pudding mixture into a bowl, cover and put in the fridge for 3-4 hours or overnight.
