Simple Sausage, Egg and Cheese Casserole

Protein packed with spicy sausage, fluffy eggs and gooey cheese
Servings: 12 people

Ingredients
  

  • 1 lb ground spicy sausage
  • 10 large eggs
  • 1 cup heavy cream or sour cream
  • 1 can diced green chilies mild or hot
  • 8 oz. cubed Velveeta cheese
  • 1 tsp. garlic powder

Method
 

  1. Preheat your oven to 350° F. In a skillet, cook the spicy sausage until browned.

  2. While your sausage is cooking, crack 10 eggs into a bowl. Add the cream (or sour cream), and diced green chilies. Whisk together until smooth.
  3. Once the sausage is done cooking, transfer it to a greased 9x13 baking dish. Slowly pour the egg mixture over the top of the sausage.
  4. Add the cubed Velveeta cheese to the casserole by dropping them into the egg mixture, evenly distributing them around the baking dish.
  5. Bake in preheated oven for 35-40 minutes or until cooked through and the top is slightly browned.
  6. Let sit for 5-10 minutes before slicing to eat.
