Are you in a breakfast rut? These 5 hearty breakfast ideas for big family are great for your entire crowd!

Feeding a big family is something I do daily. With 10 people in our house, we tend to eat a lot of food! Sometimes we have really busy mornings but when we have a chance to eat breakfast together it is one of my favorite times of the day. We don’t always sit down for breakfast but when we do it’s a great time of laughter and conversation.
These easy and healthy breakfast ideas are common in our house. I don’t mind us eating carb heavy breakfasts. The kids have lots of energy to burn and I tend to avoid carbs for most of the rest of the day. Breakfasts baked in the oven seem to be easiest for me as I can mix them up, pour them in a pan and then continue on with my morning chores while they bake. They also give the option of preparing them the night before and then pulling them out of the fridge to bake in the morning.
1. Baked Oatmeal
All but one of my kids enjoy this delicious breakfast. It is also the perfect breakfast to serve to a large group of people. It lends itself well to mixing it up the night before and then just baking it in the morning. This also makes a great freezer meal. You can make a big batch of these, put them in the freezer and then the night before you are going to bake it, pull it out of the freezer and leave it to thaw in the fridge. The next morning, you can bake it like normal (you may have to add some baking time if it is still partly frozen).
We enjoy our with some heavy cream poured over the top. Sometimes I will also skip the brown sugar and use real maple syrup instead.
I got this recipe from Humorous Homemaking. It is the best baked oatmeal I’ve tried. It’s not fancy at all but it can be fancied up fairly easily if you want something a little different.

2. Large Family Quick Rise Cinnamon Rolls
I’ve shared this recipe before but it seriously is one of our favorites! My entire family loves these cinnamon rolls. They are so easy because they require zero rise time. You make them, put them on the pan and bake. We usually enjoy ours with cream cheese frosting but if you’re in a hurry you can make a quick glaze with powdered sugar and milk.

3. Eggs!
Packed with lots of protein, eggs make a hearty breakfast option. You can make these so many ways that they kids will never know they are eating eggs for breakfast several times a week.

The possibilities are almost endless! Most often at our house we have egg and cheese sandwiches. The kids can cook them by themselves and they fill their tummies nicely. I also like to make these breakfast sandwiches for my husband to take to work. He eats his on keto bread to keep it low carb.
To make them we fry up an egg or 2 and then layer it on some bread with a slice of cheese. The type of bread you use depends on what you like and have on your counter. These are great with english muffins, bagels or just a regular loaf of bread.
After you have the egg and cheese layered on the bread, spread a thin layer of butter on the outside of the bread and then cook it in a pan until its nice and crunchy and the cheese is all melted. Absolutely delicious!

4. French Toast Casserole
This is a great make ahead breakfast casserole that works great as a freezer meal and it’s a great way to use up eggs. You can make 2, cook one and freeze the other for another day!
If you have a loaf of stale bread sitting around and don’t know what to do with it, look no further! This is the recipe. You can use french bread (works best) or a regular loaf of sliced bread.
I’ve had this recipe for several years and I’m not really sure where it came from. I hope your family enjoys this yummy breakfast as much as mine!

Overnight French Toast Casserole
Ingredients
- 1 loaf french bread
- 8 oz cream cheese
- 2 tbsp powdered sugar
- 3 tsp vanilla divided
- 8 large eggs
- 2.25 cups milk
- 3/4 tsp cinnamon
- 2/3 cup brown sugar
Topping
- 1/3 cup brown sugar
- 1/3 cup flour
- 1/2 tsp cinnamon
- 6 tsp butter cold and cubed
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Grease a 9×13 pan
- Slice and cube the bread
- Put half of the bread into your pan
- Beat the cream cheese, powdered sugar and 1/4 tsp vanilla together.
- Drop random spoonfuls of the cream cheese mixture on top of the bread in pan.
- Place the remaining bread on top.
- Whisk the eggs, milk, cinnamon, brown sugar and vanilla together.
- Pour the egg mixture of the bread.
- Cover and refrigerate overnight.
- The next morning, mix the topping ingredients and sprinkle on top of the casserole.
- Bake for 50-55 minutes of until done.

5. Sourdough Breakfast Cake
I adapted this recipe from one that Lisa from Farmhouse on Boone. Her recipe is technically a coffee cake (I suppose you could call this one a coffee cake too if you eat it with your coffee). You can find her recipe here.
While her recipe looks delicious, I wanted to make something that used only my sourdough discard. I was super tired the night before I made this so I wasn’t able to get the dough mixed up to ferment before hand but I had a lot of discard to use.
I used her recipe for the topping and it turned out great. She has a great article about how to covert any recipe to sourdough so I loosely followed that to replace the flour and liquid in the original recipe with sourdough starter. The result was a delicious, gooey breakfast cake.

To covert this recipe to use only sourdough discard, I replaced 1/2 cup of oil, all of the milk, water and flour with 4 cups of sourdough starter. You may need to adjust to depending on the density of your starter.
I also skipped the filling and just sprinkled the topping on the batter of the cake before I baked it. My entire family really enjoyed this cake and it definitely will become a regular around here.
