Cooking for a large family can be time consuming. Add a vacation/work trip to that and it can be extremely difficult. Freezer meals help me keep my sanity and feed my family on budget.

Preparing for a trip with a large family is a lot of work! Planning and prepping all the food, washing and packing all the clothes, making sure the kids have toys to entertain them, planning our stops so we have somewhere to sleep, the list goes on and on.
Our family recently went on a trip from Colorado to Missouri. To help make our trip a little easier, I pre-made some meals to stick in our freezer.
Freezer cooking is the process of making meals in bulk to fill your freezer. This takes the brainwork out of meal time and makes is super fast and easy to get a meal on the table for your family.
This freezer cooking session’s meals included:
- French toast casserole – I had several loaves of bread to use up and thought that french toast casserole would be a perfect way to use them up. I just cubed them and put them into the pan. I mixed together some eggs, milk, cinnamon, vanilla and brown sugar, dumped it over the top and baked. It turned out so good.

- Lemon Vinaigrette Chicken – This one was really easy. I had received some single serving size lemon vinaigrette dressing at the food bank and one of my YouTube subscribers had suggested using it as a marinade for chicken. This was a brilliant idea and the chicken was really delicious. I ended up cutting it up in cubes and frying it in a skillet. So yummy!

- Ham, Egg and Cheese Bagels – Undoubtedly, these were the fastest meal I made on this day. I used store bought bagels, sliced them in half and layered a fried egg, a slice of American cheese and a few slices of ham. After that, I reused the bagel bag and stacked the breakfast sandwiches inside and stuck them in the freezer. To reheat them, we wrapped them in a damp paper towel and put them in the microwave until they were thawed and warm.

- Lasagna – Believe it or not, not everyone in my family likes lasagna. Despite my love for lasagna, I have a couple boys who can’t stand the cottage or ricotta cheese in the layers. This lasagna is even better left over the next day!

- Banana Bread – Although banana bread makes a great snack, we also enjoy it for breakfast. We like it warm and smothered with butter!
