I used to make these for my husband when he worked away from home. They were easy for him to take in his lunch and quick to warm up at work. They would also work well in the freezer and are a great option for grab and go breakfasts. Lately I’ve been making them for my kids and they love them! After I made them the first time, they have requested that I make them again and again.

How do I freeze them?
To freeze these breakfast quesadillas you’ll want to lay them in a single layer on a baking sheet after you cook the tortilla to make it crunchy.
Put the whole baking sheet in the freezer, keeping it flat, and freeze for 4 hours or overnight.
After the quesadillas are frozen, you will stack them in a freezer bag and put them in the freezer.
You can thaw them overnight in the refrigerator or warm them up from frozen.
When you are ready to eat, microwave for 1-2 minutes or until the quesadilla is hot.

Method
- Melt the butter in a frying pan over medium heat.
- Add chopped potatoes and cook until soft on the inside and crunchy on the outside.
- Remove potatoes from pan and set aside.
- Add sausage to pan and cook until browned and a bit crunchy.
- Once sausage is cooked, crack eggs over sausage and scramble.
- Cook eggs until done.
- Remove pan from heat.
- Using one tortilla, sprinkle with shredded cheese on half. Then top with a few potatoes and some of the sausage/egg mixture.
- Fold tortilla in half like a taco.
- Cook on a pan over medium heat until the first side of the tortilla is crunchy.
- Flip quesadilla and cook the second side until crunchy.
- Remove from heat and enjoy!
