If you’re looking for a hearty, comforting meal that fits easily into a carnivore lifestyle, this carnivore cheeseburger soup is perfect! This easy recipe, packed with rich, meaty flavor and creamy cheese, is about to become one of your favorites!

One of my favorite things about the carnivore diet is how easy it actually is. There’s no trying to figure out what side goes with what main dish. There’s no counting carbs or calories. You just ask yourself one simple question… “Did this come from an animal?” If the answer is yes, eat it! If the answer is no, pass.
Cooking for a large family is a bit challenging sometimes. It can be difficult to make a meal that everyone enjoys. But this carnivore cheeseburger soup is a favorite in our house. All 7 of my kids love it and my husbands thinks it’s delicious as well. The recipe below makes about 3 servings. If you are cooking for a large family like me, make sure you double, or triple the recipe!
What you need to make carnivore cheeseburger soup
- 1 lb ground beef
- 1 tablespoon butter
- 2 cups water
- 2 tablespoons of beef gelatin
- 1 cup heavy cream
- 1.5 cups shredded cheddar cheese
- 1 teaspoon onion powder or 1 chopped onion (optional)
- 2 tablespoons real bacon bits (optional)
- salt to taste

How to Make It
I began by preheating a pan over medium heat (I love my cast iron!). Once the skillet was warm, I plopped in my butter and let it melt. At this point, I actually added 1 chopped onion. This is totally optional and if you are on a strict carnivore diet, skip it. After I cooked the onion for a bit, I put the ground beef into the pan and cooked until it was browned. I LOVE the smell of onions and ground beef cooking together! If you choose not to use the onion but would like a bit more flavor, you can add the onion powder now.
While the ground beef was cooking, I put 2 cups of hot tap water into my large measuring cup. Then I slowly added the 2 tablespoons of beef gelatin and stirred it quickly with a fork. Keep stirring until the gelatin is dissolved in the water.
After the ground beef is browned, pour the water/gelatin into the pan. Add the heavy cream and give it a stir. Let this cook for a few minutes until it comes to a boil. Once the liquid is boiling, add the cheese a bit at a time and stir while adding. Watch the cheese melt and turn the liquid into creamy deliciousness!
Transfer the soup to your bowl and salt to taste. I also sprinkled a few bacon bits over the top of mine and it was delicious.
