A dutch baby is so simple to make. They can be as easy as mixing flour, eggs and milk together and then baking it in butter, or you can make it a little special with some butterscotch or chocolate chips, a little vanilla or some berries. When my husband and I started the carnivore diet, I knew I wanted to find a way to enjoy this easy dish without the flour, and what I came up with is amazing! This carnivore diet breakfast recipe is just perfect, full of protein, delicate texture and it can satisfy even the strongest sweet tooth.

What is a dutch baby?
A dutch baby is a large, puffy pancake that is baked in the oven. Often they are called a German pancake. You can serve them sweet with powdered sugar on top, fruit, jam or even more butter and syrup.
We used to eat these often when we lived on the farm. At one point, we had an entire fridge packed full of eggs. I think the most eggs we collected in one day was 98. That is A LOT of eggs!! German pancakes use those eggs up quickly and they are so simple to make that I would make them once or twice a week, sometimes for breakfast and sometimes for dinner.
When my husband and I started following the carnivore diet, I knew we wouldn’t be able to enjoy them anymore. But, after seeing someone use unflavored protein powder in a pancake recipe, I decided to try making a German pancaked using protein powder instead of flour. The result was a perfect carnivore diet breakfast recipe! It is fairly inexpensive, quick to mix together and you can even make it in the microwave if you don’t want to turn on your oven. I’ve even made mine in a toaster oven and it turned out fantastic.
The Perfect Carnivore Diet Breakfast Recipe
A carnivore dutch baby is so easy to throw together. I like to use my blender to mix everything together. Then I pour the batter into a buttered 8×8 pan, bake it for a bit and serve with butter and real maple syrup (of course you can skip the syrup if you are strict carnivore).
To make a carnivore German pancake you will need:
- 3 eggs
- 1/2 cup of half and half or 1/2 cup of heavy cream
- 1/2 tsp vanilla extract (optional)
- 1 scoop of unflavored protein powder (my favorite brand is Equip)
- 2-3 tablespoons butter
- Toppings of choice – this could be just butter, you could use some fresh berries, real maple syrup or even a bit a confectioners Swerve sweetener.

Like I said above, I put the eggs, half and half, vanilla and protein powder in my blender and blend until smooth. Preheat the oven to 425ºF. While the oven is preheating, put the butter into an 8×8 or 9×9 glass pan or a 10 inch cast iron skillet and put the pan in the oven. Let the butter melt and then swirl it around the bottom of the pan. Once the butter is melted and swirled, pour the batter into the pan and bake in the preheated oven for 15-20 minutes. You can also cook this in a toaster oven if your pan is small enough, or in the microwave. Bake until the middle is set.
The pancake will be big and fluffy when you pull it out of the oven. But, as soon as it starts to cool, its going to deflate. This is perfectly normal and expected.
Serve with lots of butter and maple syrup, or top with some fresh berries and a sprinkle of powdered sugar.

Carnivore German Pancake
Ingredients
- 3 eggs
- 1/2 cup half and half
- 1 tsp vanilla optional
- 1 scoop unflavored protein powder use the scoop from the bag
- 2-3 tbsp butter
Instructions
- Preheat the oven to 425ºF.
- In a blender cup or pitcher, add the eggs, half and half, vanilla and protein powder.
- Blend until smooth.
- While the batter rests, put the butter into an 8×8 or 9×9 glass baking dish, or a 10 inch cast iron skillet. Place the pan in the oven to melt the butter.
- Once the butter is melted, swirl it around in pan.
- Pour the batter into the pan.
- Bake in the preheated oven for 15-20 minutes.
- Remove and enjoy!
