My husband and I have been following the carnivore diet for almost 9 months now. Some days (like Christmas and Thanksgiving) we splurge and enjoy some treats but for the most part, probably 90% of the time, we are strict carnivore.
Growing up, my mom would make biscuits and gravy often and I loved it! My kids also enjoy it but obviously, the biscuits are a no-no on the carnivore diet (animal based foods). Since I make biscuits and gravy often, I wanted to figure out a way that my husband and I can enjoy it without going off plan.
Eggs are a great source of protein and fat, perfect for someone on a strict carnivore diet. We eat them for breakfast almost everyday and since I sometimes make scrambled eggs with the biscuits and gravy, I decided to try gravy on top of my eggs.
It is sooooooo gooooood! Granted, the gravy could be eaten with a spoon, out of a bowl like soup, but when you put it over the top of scrambled eggs, it makes you feel like you are indulging even though you aren’t.
This meal is so fast to throw together and even those who aren’t following a carnivore diet will love it.

How to Make Scrambled Eggs with Sausage Gravy
To make the scrambled eggs, follow my simple instructions from this post.
For the sausage gravy you will start by preheating your skillet over medium heat. Add a couple of tablespoons of butter to the hot pan to melt.

Add the breakfast sausage to your pan and cook it until browned. I like to cook mine until it is crispy. This adds a bit more flavor to the bottom of the pan which makes the gravy super yummy.
Once the sausage is cooked, slowly pour in the heavy cream, stirring as you pour. Bring the gravy to a simmer and let it cook for a few minutes until it thickens up. Once is starts to thicken, turn off the heat to avoid burning it.

Pour the gravy on to your scrambled eggs, salt to taste and enjoy!

Scrambled Eggs and Sausage Gravy
Ingredients
- 1 tbsp butter
- 2-4 eggs, scrambled
- 1/4 pound breakfast sausage
- 1-2 cups heavy cream
Instructions
- Preheat skillet over medium heat with 1 tbsp butter.
- Brown breakfast sausage in skillet until slightly crispy.
- Slowly add heavy cream to pan while stirring.
- Let the cream and sausage simmer for a few minutes until the cream thickens to desired consistency.
- Plate scrambled eggs and pour sausage gravy over the top. Enjoy!
