Learn how to make the best over-easy eggs. Soft, delicious whites with a gooey warm yolk, these eggs are one of my favorite breakfast dishes. They are also great on sandwiches or toast!

Over-easy egg are really quick to cook up. They are great for a fast breakfast when you need to get out the door, but they also make a fantastic addition to sandwiches or hamburgers.
It is common to find an over-easy egg over the top of oriental dishes as well. The gooey, warm yolk adds a great taste and texture.

To make the best over-easy eggs, you’ll need:
- Eggs: Farm fresh eggs are best. The are packed full of nutrition and the yolk color difference between a store bought egg and a fresh egg is mind blowing.
- Butter: 1 tbsp
- Salt and Pepper: This is optional but adds excellent flavor.
- Non-stick skillet: My skillet of choice is a cast iron skillet. I like to use cast iron because it is non-stick (when used properly), super easy to maintain, really simple to clean, and they can be used on the stove top, in the oven, and even over a campfire!
How to make the best over-easy eggs
1. Preheat the Pan
Place your non-stick skillet over medium-low heat. Make sure you don’t get your pan too hot or you will easily over cook the yolk.
2. Add the Butter
Once the skillet is heated, add the butter. Use a spatula to move the butter around. Once it is melted, move on to step 3.

3. Gently Crack the in the Egg
Very carefully crack the egg into the pan. Be careful not to break the yolk! Another option for this step is to crack the egg into a bowl and then carefully pour it into the pan.
4. Cook Until the Whites Are Set
Let the egg cook, undisturbed, until the whites are almost opaque. When they are almost completely cooked through, gently flip the egg over. Having a non-stick pan is very important for this step. If the egg sticks to the pan at all, you can break the yolk and end up with a fried egg instead of an over-easy egg.

5. Cook Briefly on the Other Side
Once you flip your egg over, let it cook for another 15-30 seconds to set the top of the whites while keeping the yolk runny.
6. Remove and Serve
Carefully move your egg to a plate. Add salt and pepper if desired and enjoy!

Tips to Make the Best Over-Easy Eggs
- Use fresh eggs for the best flavor.
- A nonstick pan makes flipping easier. Cast Iron is my go-to!
- Cook on low heat to prevent overcooking. It might take a bit longer, but the end result is worth it.
- If you have trouble flipping your egg, cover the pan with a lid for a few seconds to gently set the top.
