These giant bacon wrapped meatballs are sure to make everyone at your table say, “Whoa!” They are savory, filling, easy to prep ahead, and so fun!

Some days, you just need dinner on the table in a hurry. These meatballs came about on one of those days. The kids are I were busy with projects all morning and when it came to lunch time, I was at a loss. Earlier that morning, I I had pulled some ground beef out of the freezer so I knew I had meat. I had also been craving bacon and decided to get some of that out as well.
I began with the idea of making meatballs with bacon on the side but as I was mixing up my meatballs I thought, “What if I wrap these in bacon?” But then, rather than making small meatballs wrapped in bacon (which takes forever), I decided to make them giant and wrap them in 3 slices of bacon!
Mix them up
These are not your average sized meatballs. Each one is about the size of a baseball. One meatball is the perfect size to feed growing kids or a hungry husband. They are seasoned simply, and with the addition of eggs, pork panko, and shredded cheese, they are perfect for those following a carnivore diet (like us!).

After mixing the ground beef, cheese, eggs, pork panko, and seasonings together in bowl, I laid out 3 strips of bacon. Make sure you put the long sides together and keep them close. Next take about 1 cup of the meatball mixture, roll it into a ball and plop in down right in the middle of the bacon. Wrap the bacon ends around the meatball to secure it. I decided to cook these high-fat, low carb, carnivore friendly meatballs in my air fryer. I did this for 2 reasons. The first being that it was a hot day and I didn’t want to turn on the oven. And the second being that it is so fast! These giant meatballs were cooked for about 20 minutes at 325ºF and they came out perfect. The inside was moist and the bacon was nice and crispy.

Ingredients
Method
- In a large bowl, mix the ground beef, eggs, pork panko, cheese and seasoning. Stir until the egg is completely mixed in.
- Lay 3 slices of bacon across a dinner plate, putting long sides right next to each other.
- Form 1 cup of meatball mix into a large ball.
- Place the meatball into the middle of the 3 slices of bacon.
- Wrap the meatball with the bacon by folding the bacon over the top of the meatball.
- Cook in air fryer for 20-25 minutes at 325ºF.
