What is Cowboy Caviar?
This Cowboy Caviar packs a flavorful punch with black-eyed peas, corn, tomatoes, avocado, onions, and cilantro. The first time my mother-in-law made it, I was hooked! I love the combination of textures and flavors, and everytime I get to enjoy it, I just can’t get enough. A tangy, slightly sweet dressing ties everything together, enhancing the fresh ingredients. It’s the perfect healthy chip dip that delivers on big taste.
What You Need to Make Cowboy Caviar
Ingredients:
- 1 can (15 oz.) black-eyed peas, drained and rinsed
- 2 large tomatoes – chopped into small pieces
- 2 avocados – cut into small pieces
- 1 can of shoepeg corn, drained
- 2 bunches of green onions – finely chopped (red onion is also really nice in this dip)
- 1 bunch of cilantro – chopped
For the Dressing:
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 3-4 cloves minced garlic
- 1 tsp cumin
- 1/8 tsp black pepper
- 1 tsp salt

How to Make This Healthy Chip Dip
In a large bowl, combine the black-eyed peas, chopped tomato, chopped avocado, shoepeg corn, green olives and cilantro.
In a separate bowl, make the dressing by combining the olive oil, red wine vinegar, minced garlic, cumin, pepper and salt. Whisk together well and pour it over the top of the veggies.
Because the avocados can smoosh easily, gently stir the veggies, and pour the dressing over the top of them. You will mix them together until everything is covered with dressing.
You can eat this right away (if you just can’t wait… like me) or cover it and let it sit in the fridge for 30 minutes of so. After that, serve the dip with tortilla chips or corn chips.
