My mother in-law visited us recently and we had a bunch of fruit that was just about past its prime. She suggested we make a quick fruit salad and it turned out so well!
This one has apples, pears, bananas, strawberries and blueberries in it. We mixed in some vanilla pudding, whipped topping and almond extract.

This fruit salad recipe is not only delicious but also incredibly versatile. Feel free to customize it with your favorite fruits or whatever is in season. Add a sprinkle of toasted coconut or chopped nuts for some extra crunch, or drizzle with a bit of balsamic glaze for a touch of sophistication.
You can also skip the whipping topping or pudding and just mix the fruit together. That would be even easier and still super yummy.
The almond extract is what makes this salad. It adds a perfect little extra that I can’t get enough of. We’ve also made fruit salad using vanilla coffee creamer and almond extract. This makes a bit of a runnier salad but it is still really good.

Simple Fruit Salad
Ingredients
- 6-8 pears, chopped
- 4-5 apples, chopped
- 8-10 strawberries, chopped
- 1/2 cup blueberries
- 2 bananas, sliced
- 2 cups milk
- 1 small box vanilla instant pudding
- 1 8 oz. whipped topping
- 1 tsp almond extract
Instructions
- Mix all of the fruit into a bowl.
- In a separate bowl, mix the milk and vanilla pudding until it starts to thicken.
- Pour the pudding over the fruit and stir until combined.
- Add the almond extract.
- Fold in the whipped topping until everything is mixed well.
