Using a boxed cake mix for cookies cuts down on prep time without sacrificing flavor. All you need is a few pantry staples, a mixing bowl, and less than 20 minutes to create cookies that taste like you spend hours in the kitchen.
Plus, cake mix cookies are incredibly versatile. You can mix in chocolate chips, nuts, sprinkles, or any of your favorite add-ins. The best part? Your kids can join in and create their own unique cookie combinations.

At church this past week, someone brought in so delicious cookies to share with everyone. They were very festive and very delicious. My kids really enjoyed them so we asked if the baker would share her recipe. We were surprised to learn that they are so simple to make. The recipe is a basic cake mix cookie recipe, which she added too in order to spice them up a bit. I thought you would enjoy this basic recipe that you can very easily make your own.
Basic Cake Mix Cookies Recipe
Here’s a simple recipe to get you started:
Ingredients:
- 1 box (15.25 oz.) of your favorite cake mix. Chocolate, vanilla, red velvet, spice cake, all of them are great!
- 2 eggs
- 1 tsp vanilla extract
- 1/3 cup olive oil
- 1/3 cup powdered sugar (if you want crackle cookies)
- Optional add-ins: chocolate chips, M&Ms, crushed candies, sprinkles, mint extract, the possibilities are unlimited!
Instructions:
- Preheat oven to 375 degrees F and line a baking sheet with a silicone baking mat or parchment paper.
- Mix eggs, oil, vanilla, and cake mix in a large bowl.
- Add your favorite add-ins and mix. We used chopped Andes mints for some of ours and left the rest plain.
- Refrigerate the dough for at least 30 minutes. This makes the dough easier to work with and produces fluffier cookies.
- Using a tablespoon cookie scoop, scoop the dough into balls. Then roll each ball in the powdered sugar and place on the prepared baking sheet.
- Bake for 9-11 minutes.
- Let them cool for 5 minutes on the pan before you transfer them to a cooling rake, or the counter lined with parchment paper.



Tips for the Perfect Cookies
Chill the Dough – If your dough feels too sticky, pop it in the fridge for 30 minutes to an hour before baking. This helps the dough to hold its shape.
Experiment with the Flavors – Try lemon cake mix with white chocolate chips or spice cake mix with chopped pecans.
Keep an eye on the bake time – Cake mix cookies bake quickly, so don’t over bake them. The bake time for my oven is probably different than yours, so begin with 8 minutes of bake time and add more if you need to. The cookies will continue to firm up as they cool.

Basic Cake Mix Cookies
Ingredients
- 1 box cake mix
- 2 eggs
- 1 tsp vanilla extract
- 1/3 cup olive oil
- 1/3 cup powdered sugar optional for crackle cookies
Instructions
- Preheat oven to 375 degrees F.
- Line baking sheet with parchment paper or a silicone baking mat.
- Mix eggs, oil, vanilla and cake mix in a large bowl.
- Add in your favorite mix-ins. 1 cup of chocolate chips, a bit of mint extract, whatever you like best!
- Mix until the mix-ins are fully incorporated.
- Refrigerate the dough for 30 minutes to 1 hour.
- Using a tablespoon, scoop the dough into balls.
- If you want crackle cookies, roll the balls into powdered sugar before placing on prepared baking sheet. If you don't want crackle cookies, place the ball of dough straight onto the prepared baking sheet.
- Bake for 9-11 minutes.
- Let sit on pan for 5 minutes before you transfer the cookies to a cooling rack or parchment paper lined counter.
